  • 3 cloves garlic minced
  • 1 pint cherry tomatoes halved
  • 4 boneless, skinless chicken breasts sliced into strips
  • 8 oz mozzarella cheese shredded
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat until shimmering and fragrant.
  3. Add the sliced chicken and cook until lightly browned and cooked through, about 5-7 minutes, stirring occasionally.
  4. Add the minced garlic to the skillet and cook for about 30 seconds until it becomes fragrant, stirring constantly.
  5. Stir in the halved cherry tomatoes and season with salt and pepper; cook for another 2-3 minutes until the tomatoes soften slightly and release juices.
  6. Transfer the skillet contents into a baking dish, spreading everything out evenly.
  7. Sprinkle the shredded mozzarella cheese evenly over the top of the chicken and tomatoes.
  8. Place the dish in the oven and bake for 20-25 minutes, until the cheese is melted and bubbling with a golden-brown crust.
  9. Remove the dish from the oven and let it rest for a few minutes to settle.
  10. Slice and serve hot, enjoying the bubbly cheese and tender chicken topped with sweet, softened tomatoes.
