- Cook the rice in a rice cooker or boiling water until fluffy, then keep warm.
- Mix the miso paste, soy sauce, honey, and water in a small bowl until smooth; set aside for the sauce.
- Heat vegetable oil in a skillet over medium-high heat until shimmering; add the chicken pieces and cook until golden brown and cooked through, about 8-10 minutes, stirring occasionally.
- Add the minced garlic to the skillet and cook for 1 minute, fragrant and slightly golden.
- Pour the miso sauce over the chicken and stir to coat evenly. Continue cooking for another 3-4 minutes until the sauce thickens and the chicken becomes glossy and sticky.
- Finish the dish by drizzling sesame oil over the chicken and giving everything a quick stir to combine.
- Serve the sticky miso chicken over a bed of warm rice, garnished with sliced green onions for freshness and color.
