Ingredients
  

  • 2 cups white rice rinsed
  • 1.5 lbs chicken thighs boneless, skinless, cut into bite-sized pieces
  • 2 tablespoons miso paste red or white
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 3 cloves garlic minced
  • 1 tablespoon vegetable oil
  • 1/4 cup water
  • 1 teaspoon sesame oil
  • to taste green onions sliced, for garnish

Method
 

  1. Cook the rice in a rice cooker or boiling water until fluffy, then keep warm.
  2. Mix the miso paste, soy sauce, honey, and water in a small bowl until smooth; set aside for the sauce.
  3. Heat vegetable oil in a skillet over medium-high heat until shimmering; add the chicken pieces and cook until golden brown and cooked through, about 8-10 minutes, stirring occasionally.
  4. Add the minced garlic to the skillet and cook for 1 minute, fragrant and slightly golden.
  5. Pour the miso sauce over the chicken and stir to coat evenly. Continue cooking for another 3-4 minutes until the sauce thickens and the chicken becomes glossy and sticky.
  6. Finish the dish by drizzling sesame oil over the chicken and giving everything a quick stir to combine.
  7. Serve the sticky miso chicken over a bed of warm rice, garnished with sliced green onions for freshness and color.
