  • 4 whole cloves whole cloves

  • 2 tablespoons honey or maple syrup adjust to taste

Method
 

  1. Pour the apple cider into a large saucepan and place it over medium heat, warming until you see gentle steam rising, but avoiding boiling.
  2. Add the cinnamon sticks, whole cloves, star anise, and sliced ginger to the cider. Stir gently to combine the spices with the liquid.
  3. Bring the cider to a gentle simmer and let it cook uncovered for 15-20 minutes, allowing the spices to infuse and fill your kitchen with warm, spicy aromas.
  4. Occasionally press the spices slightly to release their oils and aroma, ensuring maximum flavor extraction.
  5. Remove the saucepan from heat and taste the cider. Stir in honey or maple syrup, adjusting sweetness to your preference.
  6. Set a fine strainer over your serving mugs and pour the hot, spiced cider through it, catching all the whole spices and ginger slices.
