Ingredients

  • 4 large egg whites from fresh eggs or carton
  • 1/4 cup shredded cheese cheddar or feta
  • 1 tablespoon chopped herbs chives or parsley
  • 1/4 teaspoon paprika or cumin optional
  • to taste salt and pepper adjust to preference
  • oil or non-stick spray for greasing to prevent sticking

Equipment

  • Oven
  • Silicone muffin mold or parchment-lined tray
  • Whisk
  • Spatula or spoon
  • Toothpick or small skewer

Method

  1. Preheat your oven to 180°C (350°F) and lightly spray your silicone muffin mold or line a tray with parchment paper.
  2. In a large mixing bowl, whisk the egg whites until they become frothy and form soft peaks—this creates a light, airy base.
  3. Gently fold in the shredded cheese, chopped herbs, and spices using a spatula, being careful not to deflate the foam—this keeps the bites tender and fluffy.
  4. Season with salt and pepper to taste, then give the mixture a gentle stir to distribute the seasonings evenly.
  5. Spoon or pour the mixture evenly into each muffin cup, filling about three-quarters full, and smooth the tops with the back of a spoon.
  6. Place the tray in the oven and bake for 15 to 18 minutes, until the bites are puffed, golden around the edges, and the tops crack slightly.
  7. Insert a toothpick or skewer into the center of a bite—if it comes out clean, they’re done; if not, bake for a few more minutes.
  8. Remove the tray from the oven and let the bites rest for 5 minutes—they will firm up as they cool slightly, making them easier to remove.
  9. Gently loosen the edges of each bite with a small spatula or knife, then carefully pop them out of the mold or lift from the tray.
  10. Serve warm or at room temperature, garnished with extra herbs if desired, and enjoy your fluffy, savory egg white bites.
