- Pat the turkey steaks dry with paper towels to remove excess moisture, which helps achieve a better sear.
- Mix the smoked paprika, garlic powder, and salt in a small bowl to create your spice rub.
- Rub the spice mixture generously all over both sides of each turkey steak, pressing it into the meat for even coverage.
- Heat a heavy skillet over medium-high heat until shimmering and hot, about 2-3 minutes. Add the oil and swirl to coat the bottom.
- Carefully lay the seasoned turkey steaks in the hot skillet with tongs, listening for a satisfying sizzle. Let them cook undisturbed for about 3-4 minutes until the underside is deep golden brown.
- Flip the steaks using tongs and cook another 3-4 minutes, adjusting the heat slightly if needed to prevent burning. Check for a good sear and golden crust.
- Insert a meat thermometer into the thickest part of a steak. Once it reaches 74°C/165°F, remove the steaks from the pan and transfer to a plate.
- Squeeze the juice of a lemon over the hot steaks for a bright, fresh finish. If using, melt the butter in the pan and swirl it around to add richness, then pour over the rested meat.
- Let the turkey rest for about 5 minutes to allow the juices to redistribute, ensuring each bite is juicy and flavorful.
- Garnish with chopped fresh herbs like parsley or thyme before slicing against the grain and serving immediately.
