  • ¼ cup heavy cream can substitute with whole milk
  • ½ cup cheese grated, such as Gruyère or cheddar
  • ½ cup fillings chopped ham, spinach, mushrooms, or other favorites
  • to taste salt & pepper season to your liking
  • a few tablespoons fresh herbs chopped parsley or chives
  • 1 sheet pie crust or puff pastry optional for a flaky base

Equipment

  • Mini muffin tin
  • Whisk
  • Sharp Knife
  • Cooling rack

Method

  1. Preheat your oven to 190°C (375°F) and lightly grease your mini muffin tin.
  2. In a bowl, whisk together the eggs, heavy cream, salt, and pepper until the mixture is smooth and slightly frothy.
  3. Chop your choice of fillings—ham, spinach, mushrooms—and evenly distribute them into each muffin cup.
  4. Sprinkle grated cheese and chopped herbs over the fillings in each cup, adding as much as you like for flavor.
  5. Pour the egg mixture into each muffin cup, filling about three-quarters full to prevent spillover.
  6. Place the muffin tin in the oven and bake for 15-20 minutes, until the edges are golden brown and the centers are just set with a slight puff.
  7. Remove from the oven and let the quiche bites cool in the tin for about 5 minutes, then transfer them to a cooling rack to cool completely.
  8. Once cooled, serve the mini quiche bites warm or at room temperature, enjoying their tender, cheesy texture and savory flavors.
