Ingredients

  • 12 ounces spaghetti or linguine or your preferred pasta
  • 4 cloves garlic roasted or cooked until fragrant
  • 4 tablespoons unsalted butter preferably unsalted
  • 1/2 cup Parmesan cheese freshly grated
  • Salt to taste Salt for pasta water and seasoning

Equipment

  • Large pot
  • Strainer
  • Large skillet
  • Wooden spoon

Method

  1. Bring a large pot of salted water to a boil, then add the pasta and cook until al dente, following package instructions. Drain and set aside.
  2. While the pasta cooks, melt the butter in a large skillet over medium heat, allowing it to foam and smell nutty as it begins to brown slightly.
  3. Add the roasted or cooked garlic to the skillet, stirring gently, and cook for about 1 minute until fragrant and slightly softened.
  4. Stir in the drained pasta directly into the skillet, tossing gently to coat all strands in the buttery garlic mixture.
  5. Sprinkle the grated Parmesan cheese over the pasta and stir until the cheese melts into a creamy, silky sauce that clings to each piece.
  6. Adjust seasoning with salt if needed, then transfer the pasta to a serving dish. Serve immediately, garnished with extra Parmesan if desired.
