Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts or thighs cut into 1-inch chunks
  • 4 cloves garlic minced
  • 2 tablespoons olive oil for marinade
  • 1 teaspoon dried oregano or Italian seasoning
  • 0.5 teaspoon red pepper flakes optional for a little heat
  • 0.5 teaspoon salt
  • freshly ground black pepper
  • 0.25 cup Parmesan cheese grated, for topping
  • 1 lemon lemon cut into wedges for serving

Method
 

  1. Combine minced garlic, olive oil, oregano, red pepper flakes, salt, and black pepper in a mixing bowl to create the marinade.
  2. Add the chicken chunks to the marinade, tossing well to coat all pieces evenly. Cover and refrigerate for 15 minutes to let the flavors absorb.
  3. Soak wooden skewers in water for at least 10 minutes to prevent burning during grilling.
  4. Thread the marinated chicken pieces onto the skewers, about 4-5 pieces per skewer, leaving space for turning.
  5. Preheat your grill or grill pan over medium-high heat until hot, hearing a slight sizzle when a test piece is placed on it.
  6. Place the skewers on the grill and cook for about 4-5 minutes per side, turning until each side is golden and the chicken is cooked through.
  7. Once cooked, transfer the skewers to a serving plate and sprinkle generously with grated Parmesan cheese.
  8. Squeeze fresh lemon over the skewers to add bright flavor and serve immediately, garnished with extra herbs if desired.

Notes

For extra crispy edges, brush the skewers with a little more olive oil during grilling. Keep a close eye to prevent burning. Best enjoyed hot with fresh lemon for added zest.
