Ingredients

  • 1.5 pounds ground chicken preferably lean
  • 1 cup ricotta cheese full-fat for best creaminess
  • 2 cloves garlic minced
  • 1/4 cup chopped fresh herbs parsley, basil, or oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil for greasing the baking sheet

Equipment

  • Baking sheet
  • Mixing bowl
  • Measuring cups and spoons
  • Cooking spoon or spatula

Method

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with olive oil or line it with parchment paper.
  2. Combine the ground chicken, ricotta cheese, minced garlic, chopped herbs, salt, and pepper in a large mixing bowl. Mix everything together until well incorporated and the mixture feels cohesive but still soft.
  3. Using clean hands or a spoon, portion out the mixture and gently roll it into evenly sized meatballs, about 1 to 1.5 inches in diameter, placing them on the prepared baking sheet.
  4. Once all the meatballs are shaped, place the baking sheet in the oven and bake for about 25 to 30 minutes, or until they are golden brown on the outside and cooked through inside.
  5. Remove the baking sheet from the oven and let the meatballs rest for a few minutes. The cheese inside will be bubbling and creamy, with an appealing golden exterior.
  6. Serve the chicken ricotta meatballs hot, garnished with extra herbs if desired. They can be enjoyed on their own, with pasta, or in a grain bowl for a satisfying meal.
