  • 2 anchovy fillets anchovy paste about 1 teaspoon
  • 1 tbsp olive oil

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray with cooking spray.
  2. In a large mixing bowl, combine the Parmesan cheese, panko breadcrumbs, minced garlic, oregano, thyme, and a pinch of salt and pepper. Mix well to create your crispy coating mixture.
  3. In another small bowl, mash the anchovy fillets with a fork until smooth, then stir in the olive oil to form a paste.
  4. Pat the chicken breasts dry with paper towels, then brush or spread the anchovy mixture evenly over both sides of each piece. This will add flavor and help the coating stick.
  5. Dip each chicken breast into the breadcrumb mixture, pressing gently to ensure an even, crispy coating forms around all sides.
  6. Place the coated chicken breasts on the prepared baking sheet, leaving space between each piece. Spray lightly with cooking spray for an extra crispy crust.
  7. Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the coating is golden and crispy. The internal temperature should reach 165°F (74°C).
