- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Slice the bagels in half horizontally and lay the cut sides facing up in the baking dish.
- In a mixing bowl, whisk together the eggs and milk until smooth and slightly frothy, which will give a light custard texture.
- Add the shredded cheese, chopped vegetables, salt, and pepper to the egg mixture, folding gently to combine.
- Pour the egg mixture evenly over the bagel halves, making sure each half is well coated and starts to soak up the custard.
- Drizzle the melted butter over the top of the soaked bagels for extra flavor and crispness.
- Bake in the preheated oven for about 20-25 minutes, until the edges of the bagels are golden brown and the filling is set and bubbling.
- Remove from the oven and let cool for a few minutes. The filling should be firm with gooey cheese and crusty edges.
- Cut into irregular, messy pieces that show the crispy edges and soft interior, then serve warm.
