About Me

Hi, I’m Theo Granger, the voice and recipe creator behind Boldly Overseasoning.

If you believe salt is not the enemy, spices should be generous, and flavor should never whisper when it can sing, then you are absolutely in the right place.

Boldly Overseasoning is my unapologetic celebration of big flavor, confident cooking, and trusting your instincts in the kitchen. I created this space for people who are done with bland food and ready to cook with courage.

Where My Love for Flavor Began

I grew up in Houston, Texas, in a loud, lively household where food was never subtle. My family gatherings were filled with smoky barbecue, deeply spiced stews, and sides that carried just as much punch as the main dish.

My earliest kitchen memories involve standing on a chair next to my aunt while she seasoned a pot of beans. She never measured. She tasted, adjusted, and added more. That rhythm stayed with me.

In our home, food was bold. It was layered. It had personality. I learned that seasoning is not just about salt and pepper. It is about balance, heat, brightness, depth, and contrast.

Education and Professional Background

I studied hospitality management at the University of Texas, originally thinking I would go into restaurant operations. During college, I worked in several kitchens, from casual neighborhood diners to upscale Southern restaurants.

Those experiences changed everything for me.

On the line, I learned precision. I learned timing. I learned how critical seasoning is at every stage of cooking. One underseasoned component can flatten an entire dish.

After graduation, I spent a few years working as a kitchen manager and later as a menu development assistant for a regional restaurant group. I helped test recipes, adjust spice blends, and refine flavor profiles before new dishes went live.

That role sharpened my palate and gave me the technical understanding to back up my instincts.

The Turning Point

Despite loving the restaurant industry, I started noticing something when friends asked for my recipes.

They would say, “It never tastes the same when I make it.”

When I watched them cook, I realized what was happening. They were holding back. They were afraid of overseasoning. Afraid of adding too much salt, too much spice, too much acid.

That hesitation was stealing flavor from their food.

I began teaching informal cooking sessions in my apartment kitchen, showing friends how to taste constantly and adjust confidently. I encouraged them to trust their senses instead of rigid measurements.

That idea became the foundation of Boldly Overseasoning.

How Boldly Overseasoning Was Born

The blog started as a simple idea. What if I created a space that gave people permission to cook boldly?

I wanted to demystify seasoning and break the fear around flavor. I began writing recipes that explained not just what to add, but why. I included tasting notes and guidance on how to adjust dishes to personal preference.

I shared tips on building layers of flavor from the beginning of a recipe rather than trying to fix it at the end.

Slowly, the community grew. People resonated with the message. They were tired of bland meals and overly cautious cooking advice.

Boldly Overseasoning became more than a blog. It became a mindset.

My Cooking Philosophy

Here is what I believe about cooking:

• Season in layers, not just at the end
• Taste as you go and adjust without fear
• Acid and salt are tools, not threats
• Heat should enhance, not overpower
• Recipes are guides, not strict rules

I want you to understand flavor, not just follow instructions.

When you know how salt enhances sweetness, how acid brightens richness, and how spice builds warmth, you cook differently. You cook with confidence.
